Simmering Sunday - Ground Beef Picadillo (Cuban Food)

Ground Beef Picadillo
1 1/2 lbs. ground beef
1 or 2 packets of Sazón Seasoning
2 tbsp Olive Oil
1 cup finely chopped onion
1/2 cup finely diced green pepper
1 tsp. Minced Garlic or 2 cloves minced garlic
1/2 tsp. dried oregano
1 (8 ounce) can Tomato Sauce
1 can (8 - 12 ounces) of Stewed Tomatoes
1/4 cup Red Dry Red Wine or Red Cooking Wine (I like to use the same wine I am drinking - just pour it in your pot)
1 tbsp Cider Vinegar
1/2 cup water
1/4 cup Pimientos, diced
1/4 cup Pitted Spanish Olives, sliced
2 cups of Minute Rice (White or Brown)
* Note: For heat you can add crushed red pepper or diced jalapeno peppers to the dish while it is simmering.
Preparation:
- Brown the meat until thoroughly cooked and set aside.
- In a skillet, heat oil on medium. Stir in the chopped onions, diced green pepper and garlic and cook until the vegetables are tender and just slightly colored.
- Stir in the meat, oregano tomato sauce, stewed tomatoes, wine, vinegar, water, pimientos and olives.
- Bring to a boil, lower heat, cover and simmer for 30 minutes. Stir occasionally.
- While the Picadillo is simmering, prepare the minute rice. Cover and set aside.
- When the food has finished cooking - prepare each bowl with a big scoop of rice and pour the Picadillo over the top of it. Voilà!
* This dish is great with red wine.
